Steak Fajita Wraps

Yummy looking steak fajita wraps!

Ingredients
  

Steak
  • 0.5 kg skirt steak or flank steak
  • 1 tbsp olive oil
  • 1 tsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlick powder
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
Vegetables
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 yellow onion, diced
  • 1 tbsp olive oil
  • salt and pepper to taste
For the wraps
  • 4-6 large flour tortillas
  • 4-6 flat tortilla chips
  • 1 and 1/2 cup shreded Mexican cheese
  • 1/2 cup sour cream
  • 1/2 cup guacamole or sliced avocado
  • 1/2 cup queso or nacho cheese Optional
  • Sliced jalapeños Optional
  • Fresh cilantro for garnish

Method
 

  1. Marinate the steak - combine the olive oil, lime juce and the dry ingerients and rub this mixture all over the steak on both sides.
  2. Heat the grill or skillet until very hot. Cook the marinated steak to your liking, remove from heat and let it rest 5-10 minutes, then slice to thin strips
  3. Cook the fajita ingredients al dante, about 8-10 minutes, remove and set aside
  4. Build the wraps, add a tortilla (see the video, it gives a very good idea how to :D)
  5. Don´t overfill the wraps, you need to close them. Place the wraps seam side down and cook it on the hot pan until goldem brown. Carefully flip and cook the other side too.
  6. Remove from heat and let it cool about 1 minute, garnish it with fresh cilantro, serve it with sour cream, salsa or hot sauce.
