Cheese cake – with brie

I love this guy’s recipes :))) always makes me laugh. He shows a recipe with addition of Brie, which makes it the only one I ever heard and now on the top list of recipes I want to try.

 

Cheese cake with Brie

Ingredients
  

  • 280 g Cream cheese
  • 250 g Mascarpone
  • 200 g Brie Cheese (200-250)
  • 100 g Sugar
  • 4 eggs incorporated slowly
  • 499 ml heavy cream
  • 2-3 tablespoon cornflour
  • Vanilla flavor optional, not in the video recipe

Notes

Add the 3 different cheese ingredients and sugar in a standing mixer and start mixing. One bye one start adding the eggs, while continue mixing. After incorporating the eggs, add the cream, while still mixing. Add a "large spoon"  of cornflour (from the video it looks like 2 tablespooons), quantity is not mentioned. Mix it well and place the mix in a cake form (with baking paper). Make sure it doesn't have bubbles by hitting the cake mold a few times. 
38 minutes at 190 C 
Take it out of the oven, and let it rest. It still have to be jigly at this stage. Place it in the fridge for about 6 hours for the flavors to combine.  
Note to self: next time add 3 tbsp of cornflour for testing purposes

Update:

The taste of this cheese cake is divine. I think it is the best tasting cheesecake I ever had.  (not just made, but had!)  This recipe is definitely on the “KEEP” it list, however I to achieve total perfection in consistency I need to make minor adjustments to it. These are “maybe” adjustments, so noting them all so next time I am trying I know where to begin.

1.) use a slightly bigger cake mold
2.) add paper to the mold and don’t use the tray under it
3.) maybe add half a tablespoon of corn flour to it
4.) maybe add a small satchet of gelatine powder to it right after finished mixing.

The cheesecake is very delicious and very filling!
