										<content:encoded><![CDATA[<p>We had some basic understanding of smoking meat based on what we seen back home&#8230; Everybody´s grandma used to have smoker at home, and the old people  knew what type of wood, how much smoke it needs and how to do it. All this knowledge is pretty much lost. I wish I would have the possibility to have a meat smoker, but right now our living conditions does not permit this (apartment), I don´t think the neighbours would appreciate me cold smoking the meat on the balcony LOL.</p>
<p>I found this video by <a href="https://www.youtube.com/@aragusea">Adam Ragusea</a> very entertaining and also informative.  Until now I had only new that hot and cold smoking exists, but had no idea what is the use of any of them. Also knew that all meat should(as it was back in the days) sit in salt for up to a few days, and for extra safety, when I tried to preserve meat.  When I did some experiments with meat preserves I did used  nitrites in the minimum recommended amount, in the attempt to try to avoid the botulism bacteria. I knwo, some poeple are fully against it, but the jury is still out there, I think it´s better to add it then to get sick from botulism. (which can be deadly and goes undetected in food&#8230;). I really apreciate him taking the time and explaining smoking <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> becasue while from the outside it seems a very simple task, it turns out to be a very complicated process if you want to get it RIGHT.</p>
<p>What is something new to me is considering liquid smoke. I had no idea that liquid smoke also can help preserve the meat due to the components found in it. I thought it will only give the smoked meat flavour which is also nice, but this changes a bit things for me. I could experiment with liquid smoke a little bit while we still live in an apartment where smoking is not doable.</p>

										<content:encoded><![CDATA[<p>It´s so simple <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> Yet so important to know how to use it! My very first time when I used a stainless steel pan was a complete disaster! I had no idea you need to heat it up, I just started as normally would with a non stick pan. I added some oil tho, thinking that it´s not non stick, so the oil will do. But oil alone was not enough&#8230; It took me more than 10 additional years to want to switch from the non stick pans to stainless steel pans, and this is when I started to search for the answer: how to use the &#8220;damn thing&#8221;.</p>

										<content:encoded><![CDATA[<p>Quite a long video about how Teflon, or the non stick coating came to be.  I have to say, I was not aware for a long time how bad this material is. And also had no idea that all the pans that are scratched should not be used any more.  I think it´s a very important knowledge, hence why this video is here. I also switched to stainless steel pans and very happy to use that instead. It took a few attempts to get it right <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> And now days there are pans with ceramic coating, that have similar properties to teflon coated ones.</p>

										<content:encoded><![CDATA[<p>I have a pretty good idea how to do it, but still need to excercise to cut it on the fat lines <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> This is an awesomely good video explaining how to do it, plus a lot of easy chicken recipes.  And every day you learn something new. I had no idea how to make the &#8220;brown stock&#8221; (by roasting the bones first!) and never heard of the Remouillage <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> I don´t think I will consider it, mostly because we don´t have any source of heat (like for example a wood stove that could keep it slowly simmering for hours) but it´s a good idea to know about it when the conditions are meet! Smaltz is a completely new thing as well <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> I would call it chicken fat, but never had any idea how to do it&#8230;</p>
